BAKING WITH FRUITFUNK – BLUEBERRY MUFFINS

Muffins are super tasty, but unfortunately not always healthy. Fruitfunk came up with a recipe for healthy blueberry muffins! Read below how you can make them!

What do you need for 8 small muffins?

-         1 sweet banana

-         2 eggs

-         125 gr oatmeal

-         100 ml milk

-         2 teaspoons of baking powder

-         3 Fruitfunk Shimmer and Shine school bars

-         1 tablespoon of cinnamon

-         Sunflower oil / olive oil 

-         Pinch of salt

-         Optional: honey

-         Muffin baking tin

-         Cupcake cups

Preheat the oven to 170 degrees Celsius. Mix the oatmeal with the banana, the eggs and the milk. Add the cinnamon, the salt and a splash of sunflower or olive oil. Add some honey if you want the muffins to taste a bit sweeter. Mix everything together. Cut the Fruitfunk Shimmer and Shine school bars into small pieces and add them to the mixture. Stir again and divide the batter between 8 muffin cups. Bake the muffins for about 30-35 minutes in the oven until golden brown. Enjoy your muffins!
