Baking with Fruitfunk - Responsible cupcakes
Healthy food doesn't have to be dirty or boring. This recipe for these fun cupcakes proves it! 🙂
What do you need for 12 cupcakes?
150 grams whole wheat spelt flour
300 grams of low-fat cottage cheese
3 eggs
50 ml water
2 tablespoons baking flour
Honey, amount to taste
4 to 5 bags of Fruitfunk, flavor of your choice
(Silicone) cupcake liners
Baking spray / butter
Preheat the oven to 180 degrees. Mix the cottage cheese, eggs, spelt flour, water, baking powder and honey well. Cut the Fruitfunk sweets into smaller pieces, but keep some sweets aside for the garnish. Stir the Fruitfunk sweets through the batter. Grease the baking cups and divide the batter over 12 cupcake cups. Each cup should be 2/3 full. The cupcakes will keep their shape best if you place them in a muffin baking cup. Put the cupcakes in the oven for 20 to 25 minutes. To make the cupcakes look really festive, add a scoop of cottage cheese and some Fruitfunk sweets as garnish on the cupcakes. Not planning on eating everything at once? You can also freeze the cupcakes!
